Cookies With Steph The Chef
Hi Everyone,
I hope you’re all looking after each other and you and your families are safe and well.
I thought I’d share this recipe with you, since I made them the other day as a treat for my family and thought you may like to do the same.
Chewy Choc Chip and Coconut Cookies
Ingredients
150g plain flour
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt
110g butter
110g soft brown sugar
100g caster sugar
1 egg
1/2 teaspoon vanilla extract
100g desiccated coconut
80g milk chocolate (chopped)
Method
Prep:30min › Cook:10min › Ready in:40min
Preheat oven to 180 C / Gas 4. Combine the flour, bicarb and salt; set aside.
In a medium bowl, cream the butter, brown sugar and caster sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut and the chopped chocolate.
Mix all the ingredients together to make a big dough.
Grab handfuls of dough and roll into balls (about the size of a ping pong ball) and Place onto an ungreased baking tray.
You should be able to make about 24 cookies. Make sure to space the cookies apart so they have room to grow.
Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks or leave to cool for a few minutes until fully formed and use a spatula, to scoop them onto a plate.
If you don’t quite need 24 cookies why not try to half the ingredients and make 12. But trust me these are so yummy, everyone will love them and want more.
